Mushroom, Spinach and Parmesan Pasta

Serves 4 Prep 15 mins Cook 20 mins
  • 1 Tbsp (15ml) Oil
  • 1 Onion
  • 2 Garlic cloves
  • 250g Mushrooms
  • 2 Cups Baby Spinach Leaves
  • 1 Can (290g) NESTLÉ Dessert & Cooking Cream
  • ½ Cup (125ml) Chicken Stock
  • 2 Tbsp (30ml) Pesto
  • Salt
  • Black pepper
  • 300g Pasta shapes
  • ¼ Cup (24g) Cheddar cheese
  • ¼ Cup (24g) Parmesan cheese
  1. Heat the oil in a pan and fry the onion and garlic for 5 minutes. Add the mushrooms and fry for 3 minutes. Stir in the spinach and cook for 2 minutes.

  2. Add the cream, chicken stock, pesto and season with salt and pepper.

  3. Stir in the pasta and cheese and heat through.
