Mushroom, Spinach and Parmesan Pasta

- 1 Tbsp (15ml) Oil
- 1 Onion
- 2 Garlic cloves
- 250g Mushrooms
- 2 Cups Baby Spinach Leaves
- 1 Can (290g) NESTLÉ Dessert & Cooking Cream
- ½ Cup (125ml) Chicken Stock
- 2 Tbsp (30ml) Pesto
- Salt
- Black pepper
- 300g Pasta shapes
- ¼ Cup (24g) Cheddar cheese
- ¼ Cup (24g) Parmesan cheese

Heat the oil in a pan and fry the onion and garlic for 5 minutes. Add the mushrooms and fry for 3 minutes. Stir in the spinach and cook for 2 minutes.

Add the cream, chicken stock, pesto and season with salt and pepper.

Stir in the pasta and cheese and heat through.
